March Cave to Co-op Special: Pawlet Cheese!

The March Cave to Co-op special is Pawlet from from Woodlawn Creamery in West Pawlet, VT. Made with raw Holstein cow’s milk, Pawlet is an Italian style Toma with a washed rind. It’s mild and buttery with grassy, nutty notes.
Pair it with crusty bread, apples, pickles, mustard, dry cider, pilsner, light reds, and crisp whites. It also makes an amazing mac and cheese and goes great on burgers!
