Recipe: Seared Skate Cheeks
We love Chatham Harvesters, a fishing co-op owned and operated by the fishing families of Gloucester. One of the lesser-known products we bring in from them is skate cheeks. If you’ve never tried them, imagine an easy-to-make version of crab or lobster with that luxurious texture and buttery flavor.
Grab a 1-lb pack this week and try the simple recipe below. Pair the rich taste with local green kale from Small Farm or Rainbow Chard from Hannan Farm. And let us know what you think!

Pan Seared Skate Cheeks
Ingredients:
- 1lb Chatham Harvesters skate cheeks, thawed
- Salt & Pepper
- Extra Virgin Olive Oil
- 1-2 Tbsp. Butter
Directions
- Rinse and pat dry your skate cheeks and season with salt and pepper.
- Get a pan medium-hot with olive oil and butter.
- Sear the cheeks a few minutes on each side until golden brown.
- Do them in batches and don’t overcrowd the pan.
