Recipe: Morning Glory Muffins

Morning Glory Muffins
Serves: 12 (12 muffins)

Ingredients
2 1/2 cups all-purpose flour
1/4 cup ground flax
1 ½ teaspoons baking soda
2 teaspoons ground cinnamon
½ teaspoon ground ginger
¼ teaspoon nutmeg
¼ teaspoon salt
2 large eggs
2 tablespoons honey
¼ cup sunflower oil
¼ cup smooth unsweetened applesauce
1 teaspoon lemon zest
¼ cup milk
1 teaspoon vanilla
1/3 cup dark brown sugar
1/3 cup unsweetened coconut flakes
2 cups shredded carrots
1 large apple grated
½ cup raisins
½ cup unsalted chopped pecans
Preparation
Preheat oven to 375 degrees. Prepare a twelve-muffin tin with liners.
Whisk dry ingredients together in a large bowl, set aside.
In a medium bowl mix eggs, honey, oil, applesauce, and lemon zest. Stir in brown sugar and coconut flakes, mix well. Next stir in the carrots, apple, raisins, and pecans.
Fold dry ingredients into wet ingredients until just mixed.Scoop batter into liners filling to the top.
Bake for 25 to 28 minutes at 375 degrees.
